I’m feeling cheesy this week. I had a lovely weekend with friends in Paris and an epic FaceTime with Baba for her 89th birthday. That said my heart goes out to all those who are suffering in Nepal and around the world. Stay strong!

This is a great little appetiser for dinner parties as it looks impressive but is super easy!
INGREDIENTS
Block of Cheddar cheese, cut into mini cubes
Block of Red Leicester cheese, cut into mini cubes
Block of Halloumi cheese, cut into mini cubes
TOPPING
White miso topping –
2 tbsp white miso
2 tbsp water
1 tbsp mirin (or 1 extra tbsp water)
1 tbsp agave syrup (or sugar)
Red miso topping –
2 tbsp red miso
2 tbsp water
1 tbsp mirin (or 1 extra tbsp water)
1 tbsp agave syrup (or sugar)
Sweet chilli topping –
I buy this ready made from the supermarket. I’ll put a recipe up when I get round to making it myself 🙂
METHOD
1. Mix together sauce ingredients for white miso topping and red miso topping in separate bowls. Bring each of the sauces to the boil in separate pans, then simmer until the sauce returns to the consistency of miso paste without the extra ingredients added. Leave to cool.
2. Fry the halloumi for a minute or so on high heat so it is charred on the outside.
3. Cut the cheeses into tiny cubes and stab each with a cocktail stick.
4. Spoon the red miso sauce onto cheddar pieces, white miso onto the Red Leicester and sweet chilli onto the halloumi.
