SCALLOP SALAD

Scallop salad! Yay let’s dance! 🙂

Serves 4 as a side salad or 2 as a more substantial dish
Difficulty level: EASY PEASY

INGREDIENTS
8 fresh scallops
1 packet of salad
Splatter of pine nuts
Salt
(you could add some crispy lardons too if you feel like it!)

DRESSING
6 tbsp olive oil
3 tbsp rice vinegar
1 tbsp soy sauce
1 1/2 tsp sugar
Pinch of salt and pepper

METHOD

1. Sprinkle salt over scallops.
2. Mix dressing ingredients in a small bowl.
3. Heat up pan on high heat and add some olive oil. When hot, add scallops and fry for 2-3 mins. They should be caramelised on the outside and slightly translucent on the inside. (If you think the scallops aren’t so fresh cook them an extra minute to be sure).
4. In a big bowl, mix  salad leaves, pine nuts and dressing. Finally throw in scallops and serve in a big salad bowl.
