‘Saka-mushi’ means steamed in sake. It’s a really healthy way of preparing chicken and simple too! For this dish, you could replace the sake with water. I use the juices from the chicken to make a delicious sauce.
Serves 2 as a main meal or 4 as an appetiser/ little dish

INGREDIENTS
4 chicken breasts or thighs
3 tbsp sake
1 tsp salt
SAUCE
Left over juice from chicken
1 tbsp soy sauce
Sprinkle of chopped chives and fresh ginger
METHOD
1. Boil water in steamer.
2. Put chicken in a heatproof dish, sprinkle salt and pour over sake. Put the whole dish in a steamer. Steam the chicken for about 15 mins.
3. Take the chicken out and slice.
4. Mix the juice which is left in the chicken dish with a tbsp of soy sauce. Add some chopped up chives and fresh ginger.
5. Serve in individual bowls as a little side dish or a big one for all to share.
