HONEY & GINGER JELLY

Jelly is a really popular dessert during the hot summers in Japan. This one is super light and refreshing!

Agar, known as kanten in Japan, is a healthy vegetarian alternative to gelatin!

INGREDIENTS

1 tbsp agar powder
400ml water
2 tbsp runny honey
2 tbsp sugar
2 tbsp ginger juice

METHOD

1. Grate ginger and squeeze out juice.
2. Mix honey, sugar and ginger juice.
3. Whisk kanten powder into water in saucepan on medium heat. Bring to boil. Simmer for 2 mins. Add honey, sugar, ginger mix and simmer for 1 more min.
4. Stir, transfer to bowls or containers and chill in the fridge.
