‘Purin’ is the Japanese name for a kind of baked egg custard dessert. This one is made with black sesame seeds – it’s super easy and tastes just INCREDIBLE!
INGREDIENTS
3 eggs
60g sugar
125ml milk
125ml double cream
1/2 tsp vanilla essence
30 ground toasted black sesame seeds
An extra drizzle cream and some raspberries
METHOD
1. Grind sesame with pestle and mortar or smush another way (with a rolling pin, the back of a knife, a spoon…)
2. Beat eggs and sugar well.
3. Add cream, milk and vanilla essence to egg mix whilst beating. Finally mix in ground sesame.
4.Strain mixture through sieve and transfer into individual ramekins.
5.Put about an inch of water into a steamer or large pan and bring to the boil. Once boiling, turn heat to low and carefully place ramekins in pan. Put lid on pan and steam puds for 10 mins. Switch off heat and leave with lid on for 10 more mins.
7.Leave the purin to cool completely. You can eat them straight away or chill them in the fridge. To flip them over, loosen edges with knife, put a plate on top of the ramekin and flip over. Drizzle some extra cream and eat with some fresh raspberries. Mmm…
