What is Japanese rice?
Short grain rice that’s sticky and fluffy when cooked. It is sometimes called sushi rice in certain supermarkets because it is the rice used to make sushi…
How do you cook it?
If you eat rice often I would really recommend getting a rice cooker as the rice comes out just right every time. But it’s also really easy to make in the pan. Here’s how I do it:
INGREDIENTS:
rice
water
ratio 1cup rice:1.3 cups water
METHOD:
1. Wash rice and drain thoroughly.
2. Put rice and water in a pan and place lid on top. Bring to the boil. Turn down heat to low and simmer for 8-10 mins. Take off the heat and leave with lid on for a further 10 mins.
3. Gently stir rice and serve as you wish.
Are there other varieties?
Yes there are lots: brown (genmai), half-brown (haigamai), mixed grain and more! All require slightly different amounts of water and cooking times. Most supermarkets sell white sushi rice but not other varieties. Asian stores and online stores will have all kinds, so you can explore and find your favourite!
