What is tofu?
Tofu is made from coagulated soy milk.
Does it come in different varieties?
Fresh tofu can be soft, medium or firm. The firm type is usually used in cooking and should be dried before using. You can do this by wrapping it in kitchen paper and placing a weight such as a cookbook on top to squeeze out excess moisture. The silken type I like to eat raw with ponzu (citrus flavoured soy sauce) or mash it up to make tofu burgers or a creamy sauce.
But tofu has no taste, what’s the point?
Tofu is one of the most versatile cooking ingredients and is packed full of nutritious goodness. I once went to a restaurant where there were 13 courses all made from tofu! Even the ice cream. It absorbs flavours, adds texture and can really make a difference to your dish. Tofu is not just for veggies!
